  • 12 tsp honey (hot)

For the vegetable mix

For the bbq beef filling

  • 3 lbs steak (shaved)

  • 25 g bbq seasoning

  • 1 mozzarella (fat free), shredded

  • 1 cup greek yogurt (nonfat)

  • 14 tbsp bbq sauce (sugar-free)

Instructions

    Once the vegetable mix is fully cooked, divide it equally and stir half into the Mexican beef skillet and half into the BBQ beef skillet.

    Lay out 24 flour tortillas. Portion the Mexican beef filling onto 12 of the tortillas, and the BBQ beef filling onto the remaining 12 tortillas.

    Drizzle additional barbecue sauce over the Mexican burritos and hot honey over the BBQ burritos if desired, then wrap each tightly.

    Place the wrapped burritos into meal prep containers. Store 12 in the refrigerator for up to 5 days, and freeze the remaining 12.

    To reheat from the refrigerator, microwave for 1 minute. To reheat from the freezer, microwave for 1 minute, flip, and microwave for an additional minute.

    In a large electric skillet, combine the diced onions, diced bell peppers, diced radishes, and optional diced habanero peppers. Season with garlic, black pepper, and paprika, then cook on the stovetop until softened.

    In a second electric skillet, add the shaved steak for the Mexican filling and season with the Mexican all-purpose seasoning. Cook on the stovetop.
