Cheesy Ground Beef and Tomato Pasta
A quick and easy one-pan pasta dish featuring ground beef, fresh tomatoes, and melted cheese.

8 oz pasta
3 tbsp olive oil
6 tomato
1 onion, diced
1 lb ground beef
4 garlic, minced
2 tbsp tomato paste
1/2 cup parsley, chopped
1 tsp paprika
1 tsp thyme
1 tsp oregano
1 tsp salt
1 tsp black pepper
3/4 cup mozzarella, shredded
3/4 cup cheddar cheese, shredded
Instructions

Cook the pasta in salted water until al dente, then drain and set aside.

Heat olive oil in a large pan over medium heat. Trim the bottoms off the tomatoes and place them around the edges of the pan. Add the diced onion to the center, cover, and cook for 8 minutes until softened.

Move the onions aside, add the ground beef to the center of the pan, and cook, breaking it apart, until browned.

Peel the skins off the tomatoes and crush them directly in the pan.

Add the minced garlic, tomato paste, chopped parsley, paprika, thyme, oregano, salt, and black pepper, then stir to combine.

Stir in the shredded mozzarella and cheddar cheeses until melted and creamy.
